  • Low Gee Pizza Crust

    Origin: Modification of recipe from marksdailyapple.com

    Quantity: 1 pizza.

    Description: A basic pizza dough that holds together.

    Main Ingredients:

    • 2 cups almond flour (make from almonds easy)
    • 1/4 tsp baking powder
    • 2 eggs
    • 2 tbsp melted butter not used in trial, will do next time
    • 1 tsp (salt) not used in trial, will do next time

    Incidentals:

    • Pizza Sauce
    • Cheese
    • Toppings

    Instructions:

    1. Preheat oven to 350 degrees
    2. Mix ALL ingredients. Should be dough consistancy.
    3. Roll out on baking sheet to 1/4 in thick.
    4. Bake for 15 mins.
    5. At this point you are ready to top the pizza with the pizza sauce, cheese and any toppings.
    6. Return to oven for 15 more mins.
    7. Serve.

     

  • Basic Flourless Muffin

    Origin: Mostly original

    Quantity: Makes 6 muffins exactly.

    Description: A basic muffin that is mostly protein and low carb.

    Main Ingredients:

    • 2.5 1.25 cups almond flour  (make from almonds easy) -{2.5 was a typo. I followed my own typo and it was terrible. Way to dry.}
    • 1/4 cup coconut flour (unsweetened coconut) or >>add that much more almond.
    • 1 tsp baking powder
    • 4 eggs
    • 4 tbsp butter
    • 2 tbsp honey or >>3tbsp agave -{Wanted to sweeten the recipe. Supposedly agave is sweeter than honey. Wanted a lot of sweet so increased measure and swapped}
    • [[apple pie spice]]
    • Optional: Fruit Filling -{I used whole raspberries.}

    Incidentals:

    • small amount of extra melted butter
    • muffin cups

    Instructions:

    1. Preheat oven to 350 degrees
    2. Melt butter. If you heat the honey at the same time it can make the honey easier to use.
    3. In a medium bowl, mix the 4 eggs, the 2 tbsp of honey, the 4 tbsp of butter.
    4. In a small bowl, mix the 2.51.25 cups almond flour, the 1/4 cup coconut and the 1 tsp of baking powder.
    5. Slowly mix the dry ingredients into the wet ones making sure to mix well. (the mixture should be somewhere between spoonable and pourable)
    6. Baste a very light coating of melted butter onto the paper muffin cups.
    7. Fill the muffin cup to the brim.
    8. Bake for 30 mins. Should be golden brown.

     

  • How to Make Almond Flour

    Description: Method for making almond flour. Its easy!

    Main Ingredients:

    • Almonds (as of today I have only tried making these from chopped or sliced almonds)

    Instructions:

    1. Put in food processor (or blender) and chop for 30 seconds.  Note: There is a huge amount of time where the almonds are in a usable meal. To make them ideal, be careful to chop just until the almond powder begins to ever so slightly clump. Its very subtle but as long as you don’t make almond butter your fine. Be carefull when blending because the pressure on the almonds is greater and you are more likely to blend to long.
  • Day 14 on DeGee Diet

    I made a very important discovery: I love In-N-Out protein style. Wow!!! I have never really liked the restaurant before but now I realize that the bun was holding it back. It is so much sweeter bun free.

    Anyway Ive been working on this site today. I am thinking about bringing it up to snuff and actually making it useful. Since the diet is teaching me many things I would like to share I want my place to share it to be clean and useful. Now tojomo.com is not about the diet. It is about me and as such I also want a bunch of other stuff up. Some of which will relate and some of which will not.

    I would like to coin the DeGee Diet after the notion that you DEcresase your intake Grains and the Glycemic index of the foods you eat. Maybe if the diet works I will devote a site to it for people to share recipes and talk about their DeGee friendly diets.

    On that note, so far I have not seen any brain improvement from the diet. My weight loss was only temporary and I am back up to 163. I did do all my laundry and dishes today so maybe I have more energy but after 13 days on the diet I kinda expected more. On the good note: my cravings for carbs have receded. That happened during week one. I still crave them mentally if offered them  (you know when someone drops a root beer float off at your desk and you really want to drink it because it will taste so good?). But I think I am over the physical cravings andif out of site they are out of mind.

    I am still working on DeGee recipes. The ones out there suck. The muffins always come out too runny or too stiff. Sometimes they just come out nasty. Last night I made a batch that will serve as my base for future forays into baking. I made Basic Almond/Coconut Meal Muffins (low carb / low sugar / low GI / all natural)

  • Day 12 on DeGee Diet

    I have been taking apple cider vinegar for a few days now. 1 tbs 2-3 times per day. I am hoping it help lift the brain fog. So far no help. I will have to talk to doc about low t levels or other possabilities.

    In twelve days the most I have cheated was a peice of fried chicken (trans fat) and a small amount of cheesy bread. Not to bad. I have successfully made almond coconut muffins and have been eating a ton of apples and bannanas.

    I did not weigh in at the start since this is not that kinda diet but I figure I should watch it due to reports of six pack abs coming out of similar diets. I was about 163 and still am.

  • Brain Fog

    So I began to research my own brain fog. The difficulty thinking and the fatigue that goes with it.  The first result on Google happened to be about ADD which makes sense since I am. Anyways to a list of possible causes (+ cures) I have compiled.

    If one is fortunate, brain fog improves in a few weeks on a nutritional balancing program.  All that may be needed is to clean up one’s diet.  Just eliminating sugar, wheat, fruit and a few other foods from the diet can do a lot in some cases, often in matter of days, in fact.  Also, be sure to drink 3 quarts of spring water daily, rest more, breathe more deeply and make other simple lifestyle changes.   • Day 7 on DeGee Diet

    Yesterday was a long work day since I was making up time from the Vitamin B incident but today was my day off.

    If anyone hasn’t seen Bridesmaids, do it. Great movie. The theater was crowded because of the holiday weekend.

    I started the day with scrambled eggs with steak and green onions and bell peppers with a side of strawberries and almond butter.

    After the movie I was ravenous so I had Arby’s Angus Steak sandwich (an a Jr Roast Beef) without buns. Since the brain fog was still rolled in I has an all fruit smoothie juice drink and that seemed to help.

    At the end of the day I decided to start experimenting with muffins again. This time I found a buckwheat recipe but it was terrible. It didn’t rise (or fall). It was like a mud pie in a muffin tin. Kinda tasted the same.

  • Day 5 on DeGee Diet

    I took a high potancy vitamin b, time release and it made me dizzy and headachy. I realized today that it had been doing this for quite some time. Why did I not notice b4? Because I stopped taking it and took one again and realized it what had been giving me that feeling. I don’t think this was related to my diet.

    I made shrimp with strawberrys today. I cooked the strawberrys and probably wasn’t the best. Oh well.

    Un related to diet, I got my boo something to give him tomorrow. I hope he’s not reading this or he will know how much I love him and think about him.

  • Day 4 on DeGee Diet

    Day 4 went well. Olive garden is my enemy… it looks so good. Lucky I don’t go there often.

    Me and my sexy boo make scrambled eggs with veggies for breakfast. He is being so supportive. He is amazing.

    We did have an interesting convorsation about saturated fats though. He told me that modern science believes saturated fats to be bad. I went looking for the evidence and even though I was sceptical of sat fats being bad, was shocked to find as little evidence as I found. I guess long term diet studys are hard.

    (I’m just glad my bf is amazing enough to let me argue with him. When I told him I had looked it up, I don’t think I convinced him but he was sweet enought to be a bigger man and let it go. I don’t need him to do that but I love him for his reasons.)

    Food for the day: almond meal muffins. No flour at all and just a dollup of honey.

  • Day 3 on DeGee Diet

    So I finished day two. I worked. It helps that I have had the morning meal of a banana and an apple for months now. Not so hard to cut things if u have things to put back.

    Food today was beef strips stir fried with bell peppers, pinapple, garlic and a dallop of honey.
